*Upon boyfie’s request, I took on cooking this delicious eggyolk-based recipe. It was my first time and it was a success if it weren’t for the slightly-burnt sugar. But I didn’t have craters in the flan and that said everything!:)
Ingredients:
8 eggyolks
1/2 cup Condensed Milk
1 1/2 cup Evaporated Milk
2-3 drops of Vanilla
Caramel:
1 cup sugar
1 tbsp lemon juice
2 tbsp water
- Place all ingredients in a pan over low heat. Wait until it turns brown but do not overcook it. Otherwise, the sugar will be burnt.
- Transfer the caramelized sugar in the flan molds.
Flan:
- Combine rest of the ingredients in a bowl and mix until no lumps are visible.
- Run the mixture over a seive for a smoother and perfect flan. If a seive isn’t available, just manually take out the gelatinous pieces in the mixture. It worked perfectly for me.;)
- Pour mixture over the flan molds with the caramelized sugar.
- Steam for 30-45 minutes or until done.
