
Ingredients:
CRUST:
2 cups graham crackers, crushed
3 tbsp sugar
1/2 cup melted butter
• Combine ingredients and mix well. Press in pie plate and chill for 15 minutes.
COCO GELATIN:
2 cups all purpose cream
3/4 cup coco cream
1 small can of condensed milk
2 tsp cornstarch
2 tbsp unflavored gelatin
• Combine ingredients in a bowl and mix well until cornstarch is dissolved.
• Heat mixture over low heat and let it simmer for 5-10 minutes, stirring constantly.
• Pour mixture on pie crust and chill for 3-6 hours.
MANGO GLAZE:
1 cup mango puree
1 tsp unflavored gelatin
1/2 cup water
• Combine ingredients in a saucepan and mix together until gelatin is dissolved.
• Heat over low heat for 2-5 minutes, stirring constantly.
To assemble PIE:
2 mangoes, sliced
mango glaze
• Arrange mango slices on top of chilled and all-set pie.
• Pour glaze on top of mangoes.
• Chill for 2-3 hours before serving.
*a recipe from del monte was the inspiration for this. I must have missed out on a procedure or ingredient bec. it turned out to be a failure. I came up with this revision instead.
